Alberti’s Figtastic Summer Salad
Lets get Figgy with it…
This is the most amazing, delicious salad you will ever set your eyes on or eat, with gorgeous colours, it tastes as good as it looks… Just like us 😉
Fresh, quick and packed full of flavour, its perfect for the summer… It really is Summer on a plate.
- Salt & Pepper
- 10 Fresh Basil leaves
- 150g Cherry Tomatoes halved
- 1 Red onion finely sliced
- Extra virgin olive oil
- Balsamic vinegar
- 1 large Radicchio or Chicory
- 150g Rocket leaves
- 5 Fresh Figs quartered
- 175g Gorgonzola Piccante cheese
- 100g Walnuts
This is very quick, easy and full of flavour. To start, cut the radicchio (radicchio has a bitter flavour and contrasts well with milder leaves such as rocket, try chicory as an alternative) and add to a large bowl. Then add the sliced red onion, basil, rocket and halved cherry tomatoes. Drizzle with extra virgin olive oil and balsamic vinegar and season with salt and pepper. Adding salt to the cherry tomatoes will really bring out the full flavour. Give these ingredients a good mix with your hands and make sure all is coated and mixed together completely.
The salad should be well dressed … Just like an Italian 😉
Pour this mixture onto your platter and spread out evenly. This is already looking Seductively Summery 😉
To finish this stunning salad, top with the figs cut into quarters, crumble on the Gorgonzola Piccante and sprinkle the halved walnuts over the top of the salad. To finish drizzle a little extra virgin olive oil.
The sharpness of the Gorgonzola Piccante and bitterness of the radicchio contrasts so well with the sweetness of the figs and balsamic vinegar and works perfectly together.
