Pasta with lentils is the perfect hearty meal that’s nutritious and full of flavour and quick to make for all the family.
Ingredients
- 500g/1 lb short pasta
- 200g/1 cup lentils
- 2 carrots finely chopped
- 2 celery sticks finely chopped
- 1 onion finely chopped
- 1 tbsp tomato purée
- 1 litre/4 cups veg stock
- Parmesan cheese
- Extra virgin olive oil
- Salt & pepper
Method
Add a drizzle of oil to a large pan and add the carrot, onion and celery and cook on a medium heat for around 5 minutes.
Add the tomato purée and cook for a further 3 minutes. Now add the stock and mix.
Drop in the pasta and cook for 10 minutes.
Add the lentils, mix and add generously parmesan cheese and mix well. Season with salt and pepper.
Leave to simmer for 5 minutes.
