Beautiful chicken dressed in a rich Marsala sauce with mushrooms is the perfect dish to create at home. It’s simple and quick to make and the sauce is to die for!
- 2 chicken breast, halved
- 250g/8 oz cremini/chestnut mushrooms, sliced
- 4 garlic cloves finely chopped
- 60ml/3/4 cup Marsala wine
- 150ml/1 cup chicken broth
- 1 tbs butter
- 150g/1 cup flour
- Salt & pepper
- Extra virgin olive oil
- Fresh parsley finely chopped
Season the flour with salt and pepper and dredge the chicken breasts in the flour.
Drizzle some oil in a large saucepan on medium heat and cook the chicken for around 3-4 minutes each side.
Take the chicken out of the pan and set aside.
Now add the mushrooms and cook for around 5 minutes, add the garlic and continue to cook for 2 minutes.
Add in the Marsala wine and reduce for around 5 minutes.
Add in the butter and chicken stock and bring to a simmer.
Add the chicken back to the pan and cook for a further 5 minutes. Season to taste and sprinkle the parsley on top.
