Pappardelle ai funghi

A quick delicious dish, that’s full of flavour and easy to make.


  • 500g/1 lb pappardelle
  • 200g/2 cups mixed mushrooms – Oyster, Shiitake, King Oyster, sliced
  • 3 garlic cloves finely sliced
  • 100g/1 stick butter
  • Salt & pepper
  • Handful fresh parsley finely chopped
  • Extra virgin olive oil


Add the pasta to a large pan of boiling salted water and cook until al dente.

Drizzle extra virgin olive oil in a large saucepan and add the mushrooms. Cook for around 5 minutes.

Add the garlic and butter and cook for a further 2 minutes.

Season with salt and pepper.

Add the pasta to the pan with the mushroom and toss together, add the parsley and mix well.

Serve immediately… Buon Appetito
