The perfect pairing of pasta and potatoes! A hearty meal that will warm the heart and the soul.
Ingredients
- 300g/3 cups small tube pasta
- 500g/1lb potatoes peeled and cut into small cubes
- 1 onion finely chopped
- 500ml/17oz veg stock
- 1 tbsp tomato purée
- 250g/1 cup Provolone cheese
- 250g/1cup Pecorino Romano
- Salt & Pepper
- Extra virgin olive oil
Method
Add a drizzle of oil to a large pan, on medium heat add the onion and potatoes and fry until the onion is translucent.
Add the tomato purée and mix well for 2 minutes, then add the stock.
Season with salt and pepper. Simmer for 30 minutes.
Add the pasta and mix well, cook for a further 10 minutes.
Add the cheeses and mix well.
Serve immediately with extra pecorino on top…Buon Appetito!
