Risotto al pomodoro with creamy burrata

Risotto with tomato sauce is a classic, tasty and quick dish to make, topped with creamy burrata for that extra indulgence.


  • 400g/4 cups arborio/canaroli rice
  • 1L/2 pint vegetable broth
  • 2 tbsp tomato purée
  • 100ml/1 cup tomato passata
  • 2 onions finely chopped
  • Handful fresh basil roughly torn
  • Parmesan cheese
  • Salt & pepper
  • Extra virgin olive oil


Add a drizzle of oil to a large sauce pan. Add in the onions and cook until translucent. Now add the rice and cook for a few minutes.

Start to add a ladle at a time of the broth and simmer and reduce until all the broth is gone. Keep stirring throughout and then add the tomato purée and passata and basil. Mix well and season with salt and pepper and simmer for 5 minutes.

Add a generous amount of parmesan cheese and mix together. Serve with creamy burrata on top. Buon appetito…
