Orecchiette With Italian Sausage & Broccoli Rabe

Perfect al dente pasta tossed with meaty Italian sausage and broccoli rabe with a kick of chilli makes this dish one of our go to dishes to put a smile on everyone’s face.


  • 250g/9 oz Italian sausage
  • 500g/1 lb orecchiette
  • 450g/1 lb broccoli rabe (rapini)
  • 3 garlic cloves finely chopped
  • 125ml/1/2cup Italian white wine
  • 1 tsp Peperoncino chilli flakes
  • 100g/1/2 cup parmesan cheese
  • Salt & pepper
  • Extra virgin olive oil


In large skillet, add a drizzle of extra virgin olive oil. Remove the skin from the sausages and push the meat out and add to the pan. Cook for around 5 minutes and break up the sausage meat with a wooden spoon. Add garlic and chilli flakes, and continue to cook until fragrant, around 1 minute.

Add the wine and reduce for around 2-3 minutes.

Add the broccoli rabe to a pan of boiling water for around 2-3 minutes, remove and cut into pieces and add to the pan with the sausage. Cook for around 5 minutes.

Add the pasta to a pan of boiling salted water and cook until al dente. Add the pasta to the pan with the sausage and toss together. Season with salt and pepper, add the cheese and mix together. Buon Appetito…
