Trofie Pasta with Pistachio & Mint Pesto

Traditional basil pesto is a classic, but sometimes things need a Twintastico Twist! Try this nutty, fresh twist on the classic pesto.


  • 500g/1lb Trofie pasta
  • 150g/1 cup pistachios shelled
  • 200g/1cup Parmesan cheese grated
  • 2 cloves garlic
  • Juice of half a lemon
  • Extra virgin olive oil
  • 30g/1 cup fresh mint
  • Salt & pepper


Add the pasta to a large pan of salted water and cook until al dente.

Combine all ingredients in a food processor.

Blend until smooth.
