Traditional basil pesto is a classic, but sometimes things need a Twintastico Twist! Try this nutty, fresh twist on the classic pesto.
Ingredients
- 500g/1lb Trofie pasta
- 150g/1 cup pistachios shelled
- 200g/1cup Parmesan cheese grated
- 2 cloves garlic
- Juice of half a lemon
- Extra virgin olive oil
- 30g/1 cup fresh mint
- Salt & pepper
Method
Add the pasta to a large pan of salted water and cook until al dente.
Combine all ingredients in a food processor.
Blend until smooth.
