Burrata & Bean Salad

Fresh, vibrant and packed with flavour, this simple dish is quick and easy to make. Creamy burrata oozing into a fresh bean salad is the perfect combination.

Ingredients

  • Burrata
  • 100g/1 cup cannellini beans
  • 100g/1 cup chickpeas
  • 300g/2 cups cherry tomatoes
  • 2 garlic cloves
  • Handful fresh basil
  • Salt & pepper
  • Extra virgin olive oil

Method

In a baking tray, halve the cherry tomatoes and add to the tray. Crush the garlic cloves and toss in with the tomatoes. Season with salt and pepper and drizzle with extra virgin olive oil. Pop in the oven for 15 minutes at 180c/350F.

Mix the cannellini bean, chickpeas and basil together in a bowl, season with salt and pepper and toss together with extra virgin olive oil.

Take the cherry tomatoes out of the oven and add to the beans and mix together.

Add the beans and tomatoes to a plate and top with the burrata, drizzle with extra virgin olive oil to finish. Buon appetito….
