Nduja, a spicy spreadable salami paste from Calabria, in Italy, is the perfect addition to any sauce to fire things up in the kitchen.
- 450g/1 pound tortellini
- Extra virgin olive oil
- 3 cloves garlic finely chopped
- 500g/2 cups tomato passata
- 1 tbsp tomato puree/paste
- 115g/1/2 cup nduja
- Parmesan cheese
- Salt & pepper
Add extra virgin olive t a large pan on medium heat and add the garlic. Fry until golden. Add the nduja and break up with a wooden spoon. Add the passata and season with salt and pepper. Simmer for 15 minutes.
Add the tortellini to a pan of boiling salted water and cook as packet instructions.
Drain and add the pasta to the sauce and mix well.
