An Italian poached fish dish meaning crazy water, creating perfectly cooked fish every time! Quick and simple to make and perfect for dunking your Italian bread in!
- 4 cod fillets
- 2 tbsp capers
- 3 garlic cloves finely chopped
- 50g/1/2 cup black olives
- 250g/2 cups cherry tomatoes halved
- 100ml/1 cup Italian white wine
- 100ml/1 cup water
- 1 tsp peperoncino chilli flakes
- Handful fresh parsley
- Extra virgin olive oil
- Salt & pepper
Add a drizzle of extra virgin olive to a large sauce pan and add the garlic and chilli flakes. Cook until the garlic is golden then add the tomatoes for a further 2 minutes until softened. Add the capers, olives. Add the white wine and simmer for around 5 minutes until reduced.
Add the cup of water and then the cod fillets. Season with salt and pepper and cook for around 15-20 minutes until the fish is cooked and moist.
Finish with a sprinkling of parsley… Buon Appetito!
