Italian Bean Salad

A staple of the Mediterranean pantry, beans are a healthy, versatile and a super affordable ingredient. Who doesn’t love an easy three bean salad, perfect for summer.


  • 100g/1 cup canellini beans
  • 100g/1 cup berlotti beans
  • 100g/1 cup kidney beans
  • 100g/1 cup chickpeas
  • Handful fresh basil
  • 60g/3 cups rocket/arugula
  • 2 tbsp white wine vinegar
  • 1 red onion finely sliced
  • 1 cup black olives
  • Extra virgin olive oil
  • Salt and pepper


In a large bowl add the beans and chickpeas and toss together. Season with salt and pepper, then add the olives, red onion and mix. Add the rocket, tear the basil and add, toss together. Drizzle a good glug of extra virgin olive oil and the vinegar and mix well. Buon Appetito…
