Golden crispy potatoes, with a fluffy soft centre. So easy and quick to make, packed with flavour and hard to resist.
- 1kg/2.2lbs Potatoes, peeled and cut into small/medium sized cubes
- 100ml/3 1/2 fl oz olive oil
- 5 garlic cloves, roughly chopped
- Handful fresh rosemary
- Salt & pepper
Pre heat the oven to 220C/428F.
In a large bowl add the potatoes and olive oil, garlic and rosemary. Season with salt and pepper and mix well.
Add to a baking tray, don’t overcrowd the tray and keep in a single layer. Put in the oven for around 45-60 minutes until golden, turning a couple of times during cooking.
