Beautiful, silky pesto with semi dried tomatoes elevate this pesto dish to another level. Quick and easy to make and packed full of flavour.
- 400g Casarecce or any short pasta
- 100g/2 cups fresh basil
- 100g/1/2 cup Pecorino Romano
- 100ml/1/2 cup extra virgin olive oil
- 50g/1/3 cup pine nuts
- 3 garlic cloves
- Salt & pepper
- 100g/1 cup semi dried tomatoes
Add pasta to a large pot of salted boiling water and cook until al dente.
In the meantime add all the ingredients to a blitzer/blender except for the semi dried tomatoes.
Blitz until a smooth consistency. Add the pesto to a large pan and add the pasta and toss together. Add the semi dried tomatoes and mix well.
