Casarecce with Pesto & Semi Dried Tomatoes

Beautiful, silky pesto with semi dried tomatoes elevate this pesto dish to another level. Quick and easy to make and packed full of flavour.


  • 400g Casarecce or any short pasta
  • 100g/2 cups fresh basil
  • 100g/1/2 cup Pecorino Romano
  • 100ml/1/2 cup extra virgin olive oil
  • 50g/1/3 cup pine nuts
  • 3 garlic cloves
  • Salt & pepper
  • 100g/1 cup semi dried tomatoes


Add pasta to a large pot of salted boiling water and cook until al dente.

In the meantime add all the ingredients to a blitzer/blender except for the semi dried tomatoes.

Blitz until a smooth consistency. Add the pesto to a large pan and add the pasta and toss together. Add the semi dried tomatoes and mix well.
