Golden Italian Vegetable Soup
This hearty, healthy packed soup is perfect for the cold Winters night. Giving you a big hug and full of goodness. So satisfying, it will warm your soul!
Ingredients
- 1 small butternut squash, peeled, seeded and roughly chopped
- 2 medium sized potatoes peeled

2 stalks of celery, roughly chopped

2 carrots, peeled and roughly chopped

1 small yellow onion, roughly chopped

200g/1/2lb of green beans, trimmed and roughly chopped

2 zucchini/courgettes, roughly chopped

Few Sprigs of Parsley

Few Sprigs of Basil

Extra virgin olive Oil
-
Salt & pepper

100g/1 cup Stelline Pastina

Freshly grated Parmesan
Method
In a large pot filled with water, add all your veggies including herbs, along with a generous pinch of salt and a good drizzle of olive oil, bring to a boil, lower the heat to medium-low, simmer for 1 hour.
Once the veggies are cooked, blitz in a blender or use a hand held blender. Add the puree back in the broth, bring to a boil. Season with salt and pepper, add the pastina and simmer for a further 10 minutes.
Serve with a a generous sprinkle of parmesan and a drizzle of extra virgin olive oil. Buon appetito.
