Panettone Italian Toast

We have all heard of the classic French toast, well this classic has been given a Twintastico Italian Twist using Panettone.

Ingredients

  • 4 large eggs
  • 100g/1/2 cup sugar
  • 2 tbsp mascarpone cheese
  • 125ml/1/2 cup condensed milk
  • 50ml/2 oz Marsala wine
  • 1 Panettone or Pandoro, cut into 8 equal pieces
  • 50g/1 tbsp unsalted butter
  • Vegetable oil
  • Cranberries
  • Icing sugar/confectioners sugar
  • Maple syrup

Method

In a large bowl whisk the eggs together with the sugar. Then add the mascarpone and condensed milk and whisk until smooth. Add in the Marsala wine and mix.

Dunk the slices of panettone into the egg mixture and submerse the panettone and leave to soak for 30 seconds.

Add a little of the butter and oil to a pan and set over a low heat to melt.

Turn up the heat, then add the soaked slices to the frying pan and cook for 1 minute each side, so that the surfaces are golden and browned in part. Repeat with the remaining slices.

When all the pieces are cooked and on the platter, dust thickly with the confectioners’ sugar or drizzle with maple syrup.
