Valentine’s Day Love Cake

Ingredients

For the cake

  • 1 1/2 cups/180g all-purpose or plain flour
  • 1 1/2 cups/300g granulated sugar
  • 1/2 cup/50g unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup/80ml vegetable oil
  • 1 large egg
  • 1 tbsp vanilla extract
  • 3/4 cup/185ml whole milk
  • 3/4 cup/185ml warm water

For the frosting

  • 1 cup/225g mascarpone
  • 2 cups/600g nutella
  • 1 cup/125g icing/powdered sugar
  • Crushed amaretti biscuits to decorate
  • Fresh raspberries to decorate

Method

Preheat oven to 350º F | 180°C. Lightly grease an 8-inch round/heart shaped cake pan with a little butter.

For the cake:
Combine flour, sugar, cocoa powder, baking powder, baking soda and salt in a large bowl. Whisk thoroughly to combine well.
Add oil, egg, vanilla extract and milk to the flour mixture and beat well to combine. Pour in the warm water and mix until glossy.
Pour the cake batter into the prepared pan. Bake for about 40 – 45 minutes, until a toothpick inserted in the centre of the chocolate cake comes out semi-clean with small amount of cake (not runny batter) on it due to the fudgy texture.
Remove from oven and allow to cool for 20 minutes. Transfer cake from the pan to a wire rack and cool completely before frosting.
For the frosting:
Mix together the nutella, mascarpone and icing sugar in a bowl until smooth. Spread evenly all over the cake. Top with the crushed amaretti biscuits over the top of the cake and raspberries shaped into a love heart on top.
