Italian Almond Muffins
Everyone loves sweet, moist muffins. These smell and taste amazing and are quick and easy to make.
Makes around 15
2 cups of all purpose flour
1 cup of ground almonds
1 1/2 cups of white chocolate chips
2 tsp baking powder
2 tsp vanilla extract
1 cup granulated Sugar
- 2 oz Frangelico liqueur
1 1/4 cups whole milk
1/3 cup melted butter
- 1/2 tsp salt
- 1/2 cup flaked almonds to decorate
Preheat your oven to 375F, grease a muffin pan well with some non-stick spray or lined them with paper liners and set aside.
Add chocolate chips to a large bowl with the flour, ground almonds, baking powder and salt, give it all a big stir and set aside.
In a separate bowl, whisk together the butter, Frangelico liqueur, vanilla extract, milk, eggs and sugar and pour into the dry and mix everything together to combine.
Using an ice cream scoop, divide your batter evenly among the muffin pans, top with a few sliced almonds and pop them in the oven to bake for about 20 minutes. Then remove and leave to cool. Then dig in!
