Nonna Maria’s Chicken Cutlets

This recipe brings back fond memories of our childhood. We remember running home from school, knowing our Nonna would be in the kitchen cooking for us as we arrived. The smell coming from the kitchen as we opened the door and saw our Nonna in her apron at the stove is something that will stay with us forever. We love being Italian and our tradition and culture, it’s all about family and food. Beautiful childhood memories that we will never forget and are so grateful for. Ingredients

  • 2 x 150g skinless chicken breasts
  • 100g Plain flour
  • 2 Large Eggs
  • 100g breadcrumbs
  • 2 Garlic cloves
  • Salt & Pepper
  • 1 Lemon
  • Olive oil for frying

Method

Slice each chicken breast in half to make 4 fillets, place on a board and cover with a layer of clingfilm. Bash with a saucepan or Nonna’s favourite, a rolling pin to flatten them to around 5mm thick.

Add the flour into a bowl, then crack and beat the eggs in a second bowl and season with salt and pepper. Add the breadcrumbs to a third.

Coat the chicken in the flour, then the egg and finally in the breadcrumbs, until thoroughly coated.

Heat the oil in a large deep frying pan over a medium heat and halve the garlic cloves and add to the oil. Add the chicken and cook the chicken for 3 to 4 mins on each side, or until golden and the meat is cooked through. Season with salt and pepper and serve with a squeeze of lemon. Buon Appetito
