Ingredients
Serves 5
For The Burger
- 250g Beef
- 250g Pork mince
- 5 Cloves Garlic minced
- Salt & Pepper
- 100g Parmigiano Reggiano
- 10 Pancetta rashers
- 2x125g Mozzarella, drained and cut into slices
- 5 Whole Crunchy Baby Gem Lettuce leaf
- 2 Eggs
- 100g Bread crumbs
- Basil finely chopped
- 5 Ciabatta Rolls
For The Mayonnaise
- 125g Mayonnaise
- Rosemary finely chopped
- 2/3 Cloves Garlic minced
Method
Mix the beef and pork mince, garlic, eggs, basil, breadcrumbs, parmesan and seasoning together in large bowl. Now it’s time to shape into burgers and once formed place the burgers on a hot griddle pan and cook for 5 minutes pressing down with a spatula. After 5 minutes turn the burgers over and top each one with a slice of mozzarella and continue to cook for a further 4-5 minutes. Add the pancetta to the griddle and cook until crisp.
When the burgers are cooked, cut the ciabatta rolls in half and drizzle a little extra virgin olive oil on each half and place on the hot griddle until browned. Now its time to make the rosemary and garlic mayonnaise. Add the mayonnaise to a bowl and add the garlic and rosemary to the mayonnaise and mix well. Add a nice dollop of the mayonnaise to the bottom of the ciabatta roll and then serve the burger on top, then the pancetta, then add more mayonnaise on top, then the gem lettuce and to finish, the other half of the ciabatta roll on top.
