Baci Baci… Kiss Kiss
These Italian Romantic Ricotta Balls, are a hot, soft, melt in the mouth, easy dessert. Just mix all the ingredients in a bowl and then fry rounded teaspoonfuls of the batter in just under an inch of oil until you have some light, small, ball-shaped fritters, add a powdery dusting of icing/confectioners’ sugar and put a dish mounded with them on the table with coffee and watch them fly off the table.

Ingredients
- 200g ricotta cheese
- 2 large eggs
- 75g plain flour
- 1 teaspoons baking powder
- Pinch of salt
- ½ teaspoon ground cinnamon
- 1 tablespoon caster sugar
- 1 teaspoon vanilla extract
- Vegetable oil for frying
- Icing/confectioners sugar
Method
In a large bowl, combine ricotta and eggs, and mix until smooth. Add flour, baking powder, salt, cinnamon, sugar and vanilla. Mix again to make a smooth batter.
Fill a wide, shallow skillet pan with about 2cm (3/4 inch) of oil. Place over medium-high heat until a bit of batter sizzles when dropped in. Drop rounded teaspoons of batter into the pan, 5 or 6 at a time until golden brown, around 2 minutes. Transfer the balls to some kitchen towel, to remove excess oil, and continue frying until all batter is used.
Pile the Ricotta Balls in a rough pyramid on a serving plate. Sprinkle icing sugar through a sieve evenly and generously over the balls. Serve immediately. Buon Appetito…
